Alfalfa is a perennial forage legume which normally lives four to eight years, but can live more than 20 years, depending on variety and climate. Alfalfa sprouts are the shoots of the alfalfa plant, harvested before they become the full-grown plant. Because they are so small, the sprouts contain a concentrated amount of certain vitamins and minerals such as calcium, vitamin K and vitamin C. Alfalfa sprouts are the young shoots of the alfalfa plant, eaten within four to seven days of germination. Along with many other sprouts, they are eaten as a health food and can be found sprinkled on sandwiches, mixed with salads, or added to stir fries.
