Cilantro- The plants themselves will grow to a mature height of roughly 24 to 30 inches tall and about 12 inches wide. Cilantro is a must when it comes to making salsa's and is popularly used in many Mexican dishes. It's flat, Parsley like leaves can be harvested in roughly 60 to 90 days. Italian Large Leaf Basil- Is ready for harvest in roughly 75 to 80 days. This is a delicious variety of Basil, which produces large, green leaves. The leaves are about the size of your palm, and are loaded with flavor and fragrance as well. Basil will grow to a mature height of roughly 12 to 24 inches tall, and can spread 12 to 15 inches wide. Italian Dark Green Parsley-Parsley seeds can be started indoors, or directly outdoors. If sowing indoors, start in peat pots, 8 to 10 weeks prior to the last frost. Sow at a depth of 1/8” under topsoil so that direct light can still reach the seeds. Direct sow or transplant outdoors, when the weather is warm and all danger of frost has passed. Delicious is soups, stews, salads, stocks, fish dishes, and vegetable dishes. It makes a tasty herb butter. It is high in vitamins A, C, E, and has a high iron content. Chewed fresh, it makes a good breath freshener. Thyme- Thyme is a popular herb that produces 16 inch plants with small pink flowers. The leaves are harvested to add flavor to all sorts of culinary dishes, including fish, chowders, sauces, stuffings, soups, meats and poultry. Thyme will begin to show life within as little as 14 to 28 days after sowing. The plants will grow to a mature height of about 16 inches tall and can take up a fair amount of space. Space each plant roughly 8 to 12 inches apart from one another.
